Slightly sweet, full-flavored red kidney beans owe their name to their kidney-shaped appearance (kidney = kidney in Dutch) and originate from Central and South America. It is not without reason that they are the main ingredient in many dishes from this area. The best known are perhaps chili con or sin (= without) carne and tacos, but you also see them in salads and pureed into spicy-sweet tapenades. You soak GreenAge red kidney beans overnight and then cook them for about an hour. Cooking tip: do not put the beans on high heat, but let the water boil gently & cover them with a maximum of 1 cm of water - top up with some boiling hot water from the kettle if the beans become dry. This way the beans are cooked evenly and you reduce the chance of them cracking or boiling.
