Pastrami is a delicacy that used to be made from goose. The geese used for this pastrami from Wild van Wild are shot in North Holland. Sustainable hunting aims to maintain the natural balance. After picking, the fillets are first brined and placed in the homemade brine. They are then given a herb crust and then smoked over wood and further cooked.
