This tenderloin delicate cut of beef comes from the animal-friendly Lebon farm, under the rigorous standards of farmer Jerome. Jerome and his handful of farmers ensure a short supply chain which makes it possible to trace every piece of pure and flavourful meat to the original animal.

Lebon consciously chose the Blonde d'Aquitaine and Limousin Breeds, known for their high quality meat. In summer, the pasture-raised animals eat exclusively grass; in winter they are supplemented with silage (fermented green forage) and grains grown on the self-sufficient  farm.
