The Arrigoni family produces two types of cheese: Gorgonzola and Taleggio. This cheese originates from the region between Bergamo, Milan and Cremona. During its minimum 60-day maturation, the Taleggio is regularly washed with brine to allow the rind to develop fully. The result is a wonderfully soft cheese with a lightly sweet flavour and a smooth, melt-in-the-mouth texture.
