Dupuis lentils are the same variety as the celebrated French Puy lentil, known for their small size, firm texture and delicate, earthy, slightly nutty flavour.
The original Lentille Verte du Puy is grown in the volcanic landscape surrounding Le Puy-en-Velay in France’s Auvergne region and has protected designation status, meaning only lentils grown within the designated area may carry the Le Puy name. The same variety grown elsewhere is commonly sold as Dupuis lentils. These particular lentils are grown in Canada.
Unlike softer lentils, Dupuis lentils hold their shape beautifully when cooked, making them particularly good for salads, soups, stews and as an accompaniment to vegetables, meat or fish.
Cook for 30–45 minutes until tender. Allow approximately 80–100g of dried lentils per person.
