Ca’ Verde Organic Goat’s Milk Ricotta is produced using the traditional method of gently heating fresh whey obtained during the cheesemaking process. As the whey warms, delicate white curds naturally rise to the surface, creating a ricotta with a light texture and exceptional quality.
Unlike many ricottas that are treated as a by-product of cheesemaking, this ricotta is crafted from fresh whey and requires great care throughout production. The gentle heating process allows valuable milk proteins, known as lactoalbumins, to coagulate naturally. These proteins are highly digestible and prized for their excellent nutritional value, including their rich amino acid content.
Versatile and delicious, this ricotta can be enjoyed on its own, seasoned with fresh herbs, or used in a wide variety of sweet and savoury recipes, from pasta dishes and tarts to desserts and baked goods.
