Pancetta is air-dried pork belly and really different from smoked bacon. After brining with salt and herbs, the bellies dry for several weeks in the ripening rooms of Brandt & Levie. Pancetta tastes delicious in pasta, for example, and the slices melt in your mouth. Brandt & Levie's pigs are raised in the freest possible way by Dutch organic farmers, who meet the highest standards for animal welfare.
