Ca’ Verde Organic Goat’s Milk Mozzarella is a fresh stretched-curd cheese with a delicate, naturally sweet flavour and a fragrant aroma that reflects the quality of the milk from which it is made.
Mozzarella belongs to the family of pasta filata cheeses, meaning “stretched-curd”. During production, the curd is left to mature in its whey until the action of lactic cultures transforms its structure. The curd is then worked with hot water, becoming smooth, glossy and elastic, allowing it to be stretched into fine strands. It is then shaped into individual portions and rapidly cooled to preserve its fresh texture and flavour.
Soft, creamy and versatile, this mozzarella is ideal for salads, antipasti, sandwiches, pizzas, or simply enjoyed with extra virgin olive oil and fresh herbs.
